Achis' World
 
In Chettinad, Achis give importance to healthy living. They use lots of vegetables and spices in cooking, such as various greens, fenugreek, pepper, cumin, panakarkandu(brown rock sugar or kind of palm sugar), fresh coconut milk, etc.,which turn into medicine in times of need.

Though they stick to traditions in many ways, they are also open to modern ideas. Since Chettiars have visited and lived in various countries, Achis don't hesitate to adapt to various cooking styles. They come out with beautiful and healthy fusion cooking. Nevertheless, their strength still lies in traditional Chettinad recipes.
